1 lb. cod fillet, skin removed, cut in half
2 tbsp. olive oil
1/2 tsp salt
1/3 cup almond or nut flour, rough ground
8 tbsp unsalted butter
1/4 cup grated Parmesan cheese
Preheat oven to 400 degrees F.
Rub cod with oil and season with 1/2 tsp salt.
Dip one side of fish only in flour and place on a parchment covered baking sheet. Do not dip the side that had the skin on it, that goes down on the cooking sheet.
Bake fish until just cooked through, about 10 minutes
Melt butter for dipping and stir in Parmesan and 1/2 tsp. salt.
