Beet Salad With Eggs and Sprouts

This beet salad is full of flavor and goodness. Beets are loaded with vitamin C, fiber, and essential minerals. Combine beets with greens and you’ve got a powerhouse of nutrients that are guaranteed to keep your body firing on all cylinders.

4 beets peeled and boiled or steamed until soft
2 chopped hard boiled eggs
1/4 cup chopped walnuts
2 cups fresh spinach
1/2 cup bean sprouts
1/4 cup pine nuts
4 chopped fresh chives

1/3 cup virgin olive oil
3 tbsp balsamic vinegar
1/4 tsp cumin
generous pinch of salt
generous pinch of pepper
1 tsp lemon juice


In a large salad bowl blend:
1) Chop the cooked beets into cubes and add to bowl.
2) Add all of the rest of the salad ingredients to the bowl
3) For the dressing mix all of the dressing ingredients together in a small bowl and blend well.
4) Pour blended dressing mix over the salad and toss well
5) Serve and Enjoy!
