Broccoli And Beef Stir Fry

  1. Prepare the noodles as directed on the package.
  2. Preheat a large frying pan on medium high heat. Add 2 tablespoons oil and 1 tbsp tamari and stir fry the beef.
  3. While the beef is browning, finely slice the broccoli stems and chop the heads into bite-sized florets.
  4. Add garlic (and chili and/or ginger, if using)and scallions to the beef and continue to cook until well browned.
  5. Add broccoli and a few tablespoons water and cover the pan.
  6. Continue to cook on a high medium heat with the lid on, stirring every 2 minutes until the broccoli is bright green and tender but still a tiny bit crunchy.
  7. If it starts to burn, add a little more water. Stir in drained noodles, the rest of the tamari soy sauce and oil.
  8. Taste and season and serve with chopped coriander and cashew nuts on top. Enjoy!
