Chocolate Date Coconut Balls
What if you show up at the party and have the dessert that's not only the talk of the night, but doesn't have a grain of added sugar? Every bit of the sweetness in these comes from the whole food - and nothing but the whole food. Even if you don't like dates, I double-dare you to give these a god. The coconut, almonds, and unsweetened cocoa powder create an unbelievable treat that will disappear before your very eyes.

Ingredients
Instructions
  1. SOAK: Soak the dates in warm water for an hour and then drain the water out. Put them into the food processor and then add the cocoa powder, nuts, splash of milk.
  2. PULSE: Pulse it a few times and then let it go. Stop after about 30-seconds and scrape the contents down into the middle and then let it go again. You are looking for a doughy consistency. Taste and see if it needs a bit more powder to put it as the clear leader over the date taste.
  3. SCOOP: Use a 1 tsp measuring spoon to scoop up the mixture and roll with clean hands.
  4. TOSS: Toss the balls onto a plate of shredded coconut and roll them around.
