Mediterranean Chopped Salad
Summertime is the perfect time to enjoy this Mediterranean Chopped Salad - I like mine right from the local farmer's market. I never really liked vegetables much until I started eating fresh, locally sourced produce. The flavor is amazing and you can just taste the sunshine!

  1. In a large salad bowl combine the tomatoes and cucumbers
  2. Season with 1/2 teaspoon salt and toss to coat.
  3. Let the tomato/cucumber mixture drain in a strainer for 15 minutes.
  4. Place onions in a medium bowl and cover with lukewarm water. Rinse and drain thoroughly. Repeat 2 more times until onions lose most of their pungency and taste sweet.
  5. When tomatoes and cucumbers are drained, combine with onions, feta, olives (if using), mint, oregano, lemon juice, and olive oil in a large bowl and toss to combine.
  6. Season to taste with pepper and more salt if desired (the feta is salty so you may not need any extra salt)
