Oven-baked Frittata

Some say omelet, some say frittata. This oven-baked frittata seriously rocks! It’s bursting with flavor and rocks nutritionally. There’s enough for two here. Enjoy!

4 organic eggs
1 1/4 cups of diced zucchini
1 finely chopped medium onion
1 diced medium bell pepper
1 sliced large tomato
1/4 cup Cheddar cheese
1 cup diced cooked ham
1/2 cup frozen peas


1) Bring the oven to temperature at 400 degrees F.
2) Lightly grease a baking dish and place the vegetables in it.
3) Bake the vegetables for 10 minutes and then remove.
4)Whisk the eggs and add the ham and pour over the vegetables.
5) Add the grated cheese to the top and bake for another 10 minutes or until the egg is cooked through and the cheese is melted.
