  1. Heat up the olive oil in a fry pan over medium heat.
  2. Cut the pepper into ring that are about 1/2 wide/thick. Clean out the veins and seeds.
  3. Place the pepper rings in the heated oil and crack an egg into the center.
  4. Add a pinch of salt and pepper and cover the pan to cook for about 2 minutes (less time if you like softer yokes, longer if you like harder yokes.
  5. Garnish with a sprinkle of paprika. Enjoy!
