Ingredients
4

eggs
Salt and pepper
to Taste

Large (green, red, or yellow)

olive oil

paprika
Instructions
Heat up the olive oil in a fry pan over medium heat.
Cut the pepper into ring that are about 1/2 wide/thick. Clean out the veins and seeds.
Place the pepper rings in the heated oil and crack an egg into the center.
Add a pinch of salt and pepper and cover the pan to cook for about 2 minutes (less time if you like softer yokes, longer if you like harder yokes.
Garnish with a sprinkle of paprika. Enjoy!
