Preheat a large frying pan on medium high heat. Add 2 tablespoons oil and 1 tbsp tamari and stir fry the beef.
While the beef is browning, finely slice the broccoli stems and chop the heads into bite-sized florets.
Add garlic (and chili and/or ginger, if using)and scallions to the beef and continue to cook until well browned.
Add broccoli and a few tablespoons water and cover the pan.
Continue to cook on a high medium heat with the lid on, stirring every 2 minutes until the broccoli is bright green and tender but still a tiny bit crunchy.
If it starts to burn, add a little more water. Stir in drained noodles, the rest of the tamari soy sauce and oil.
Taste and season and serve with chopped coriander and cashew nuts on top. Enjoy!
