  1. Preheat the oven to 400?.
  2. In a large bowl, combine the Brussels sprouts with the coconut oil, curry powder, salt, and pepper.
  3. Spread the sprouts on a rimmed baking sheet, cut sides-down, and roast until they are browned and can easily be pierced with a fork, about 25 minutes.
  4. Remove the pan from the oven, add the coconut flakes, and toss.
  5. Return the pan to the oven and bake for 5 more minutes.
  6. Serve immediately.
