Ingredients

cup
cooked ham
diced

pieces
eggs
3/4
cup
veggies
chopped : onions, green pepper, spinach (what you like)
cooking oil
Spray
salt
pepper
1/4
cup
milk
(skim or whole)
1/4
cup
cheddar cheese
grated
Instructions
Mix veggies and ham together in a bowl.
In a separate bowl blend the eggs and milk.
In a 12 muffin baking tin, spray with cooking oil, then add a spoon of veggies in each tin, pour on the egg mixture (do not fill the tins to the top- about 2/3rds full), and sprinkle with a pinch of salt and pepper and top with grated cheese.
Bake for 30 minutes in a 350 degree oven.
