  1. Preheat oven to 375 degrees F.
  2. Whisk eggs in bowl with salt and pepper until frothy.
  3. Add herbs and chopped vegetables
  4. Lightly grease a muffin tin (12 muffin cups).
  5. Pour the egg mix into each muffin cups.
  6. Bake for 10 minutes - they're done when browned and a toothpick inserted in the center of one comes out clean.
  7. Let cool and serve.
