Ingredients

eggs
Large (or 1 1/4 cup egg whites)

cups
vegetables
(chopped) I like broccoli and spinach)

tbsp
herbs
fresh (I like thyme)
pinch
pepper and salt
to taste
Instructions
Preheat oven to 375 degrees F.
Whisk eggs in bowl with salt and pepper until frothy.
Add herbs and chopped vegetables
Lightly grease a muffin tin (12 muffin cups).
Pour the egg mix into each muffin cups.
Bake for 10 minutes - they're done when browned and a toothpick inserted in the center of one comes out clean.
Let cool and serve.
