Veggie Roll and Dipping Sauce
These veggie rolls and dipping sauce make a great meal served with a steaming cup of soup.

Ingredients
Veggie Roll: (Plan a couple of pieces of each for each roll you make)
bell pepper
Sliced
avocado
Sliced
carrots
thinly sliced
cucumbers
Sliced
Romain lettuce
Rice paper wrap
Dipping Sauce:
1/2
cup
mayonnaise
(sugar free)
1/4
cup
Parmesan cheese
grated
2
tsps
Dijon mustard
Combine ingredients in a bowl and serve.
Instructions
Prepare all veggies and set aside. Place rice wrapper in warm bowl of water to soften.
As wrapper softens, lay on counter, fill with veggies and roll up like a burrito.
Serve with dipping sauce on the side. Enjoy!
