Sweet Potato Chips
Sweet potatoes have twice the fiber, twice the calcium, and over 1,300 times the vitamin 'A' than found in white potatoes. They are also anti-inflammatory. Yummm. Great served with soup and/or salad. When you're really craving that crunchy snack.

  1. Cover a microwave safe dinner plate with parchment paper, cutting paper to size.
  2. Coat the paper lightly with cooking spray.
  3. Arrange 1/4 of the potato slices in a single payer on the parchment.
  4. Sprinkle evenly with 1/4 of the pepper, rosemary, and salt you've measured out.
  5. Microwave at Power level 9 for 4 min.
  6. Check for crispness.
  7. Continue to cook at 30 second intervals until done.
  8. Repeat with the reamining ingredients until all of the potato chips have been cooked.
