Veggie Roll and Dipping Sauce

These veggie rolls and dipping sauce make a great meal served with a steaming cup of soup.

Veggie Roll:

Sliced bell pepper
Sliced avocado
Thinly sliced carrots
Sliced cucumbers
Romain lettuce
Rice paper wrap

(Plan a couple of pieces of each for each roll you make)


Dipping Sauce:
1/2 cup mayonnaise (sugar free)
1/4 cup grated Parmesan cheese
2 tsps Dijon mustard
Combine ingredients in a bowl and serve.


Prepare all veggies and set aside. Place rice wrapper in warm bowl of water to soften. As wrapper softens, lay on counter, fill with veggies and roll up like a burrito. Serve with dipping sauce on the side. Enjoy!
