6 cups shredded zucchini
3 tbsp olive oil (extra virgin)
3 tbsp lemon juice
1 lemon zested
1/2 tsp salt
pepper to taste
1/4 cup fresh chopped parsley and basil
Other toppings: sliced almonds, dried cherries, and goat cheese
1) Whisk together in a small bowl the lemon juice, oil, zest, pepper, and salt.
2) Place the shredded zucchini in a large salad bowl and pour the liquid mixture over the zucchini.
3) Add the fresh parsley and basil and toss.
4) Top with the additional toppings or serve them on the side.
5) Keep refrigerated.
