Baked Zucchini Fries
These baked zucchini fries are loaded with flavor and are delicious with marinara dipping sauce, or I like mine with a jalapeno salsa with a little bite!

Ingredients
4
zucchini
quartered lengthwise
1/2
teaspoon
Thyme
dried
1/2
teaspoon
basil
dried
1/2
cup
Parmesan cheese
grated
1/2
teaspoon
Oregano
dried
1/4
teaspoon
garlic
powder
2
tablespoons
olive oil
2
tablespoons
parsley leaves
chopped (fresh)
sea salt
to taste
ground pepper
to taste
Instructions
Preheat oven to 350 degrees F.
Coat a cooling rack with nonstick spray and place on a baking sheet; set aside.
In a small bowl, combine Parmesan, thyme, oregano, basil, garlic powder, salt and pepper to taste
Put olive oil in pastic bag and put zucchini in bag with oil and roll around in hands until zucchini is coated in oil.
Put Parmesan cheese on a flat plate and roll each zucchini stick in cheese to coat it.
Place of prepared rack. Place in oven and bake until tender, about 15 minutes.
Then broil for 2-3 minutes or until crisp and golden brown. Serve immediately garnished with parsley if desired.
