Serves these marinated grilled vegetables with chicken or beef cooked on the grill. The marinade gives these veggies that added flavor that makes them a grilling favorite.

  1. Put the bell pepper, zucchini, squash, mushrooms, red onion and tomatoes in a large bowl.
  2. Mix (in a small bowl) olive oil, soy sauce, lemon juice, and garlic.
  3. Pour over the vegetables.
  4. Cover bowl, and place in the frig for 30 minutes.
  5. Preheat grill for medium heat.
  6. Lightly oil grate.
  7. Remove vegetables from the frig and put on preheated grill.
  8. Cook until tender - about 12 to 15 minutes. (Use grill basket or tin foil to grill on.)
