Fresh Summer Gazpacho
This Spanish-style soup is made from tomatoes, and other vegetables and spices, served cold. Gazpacho is widely eaten in Spain and neighboring Portugal, particularly during the hot summers, as it is refreshing and cool.

  1. Wash the vegetables.
  2. Blend the tomatoes in a food blender or processor until smooth.
  3. Chop the remaining vegetables.
  4. Add the chopped vegetables to the blended tomato mixture.
  5. Add the salt, pepper, and lemon juice and stir well.
  6. Chill for at least 1 hour before serving.
