This delicious arugula, strawberry, blueberry, and blue cheese fruit salad is perfect for lunch or dinner and delivers on flavor while packed with nutrients. I sometimes add 2 tbsp of chopped almonds for a little more crunch. Double the recipe for two people.
Ingredients
- 3 Cups arugula
- 1 Cup strawberries halved
- 4 oz blue cheese Crumbled
- 1/2 Cup blueberries
- 1 tbsp olive oil Extra Virgin
- 1 tsp balsamic vinegar
- salt to taste
- pepper to taste

- Mix all ingredients in a large salad bowl, tossing until blended.
