Summertime is the perfect time to enjoy this Mediterranean Chopped Salad - I like mine right from the local farmer's market. I never really liked vegetables much until I started eating fresh, locally sourced produce. The flavor is amazing and you can just taste the sunshine!
Ingredients
- 1 pint grape, tomatoes small container and cut in half
- 1 pc cucumber (medium sized), sliced and quartered
- 1/2 tsp sea salt
- 1 pc red onion (small)
- 4 oz. feta cheese (crumbled)
- 2 cup kalamata olives (pitted and cut in half)
- t tbsp mint fresh (chopped)
- 2 tsp Oregano fresh (chopped)
- 1 tbsp lemon juice
- 3 tbsp olive oil
Instructions
- In a large salad bowl combine the tomatoes and cucumbers
- Season with 1/2 teaspoon salt and toss to coat.
- Let the tomato/cucumber mixture drain in a strainer for 15 minutes.
- Place onions in a medium bowl and cover with lukewarm water. Rinse and drain thoroughly. Repeat 2 more times until onions lose most of their pungency and taste sweet.
- When tomatoes and cucumbers are drained, combine with onions, feta, olives (if using), mint, oregano, lemon juice, and olive oil in a large bowl and toss to combine.
- Season to taste with pepper and more salt if desired (the feta is salty so you may not need any extra salt)
