Ingredients
- 1/2 cup cooked ham diced
- 8 pieces eggs
- 3/4 cup veggies chopped : onions, green pepper, spinach (what you like)
- cooking oil Spray
- salt
- pepper
- 1/4 cup milk (skim or whole)
- 1/4 cup cheddar cheese grated
Instructions
- Mix veggies and ham together in a bowl.
- In a separate bowl blend the eggs and milk.
- In a 12 muffin baking tin, spray with cooking oil, then add a spoon of veggies in each tin, pour on the egg mixture (do not fill the tins to the top- about 2/3rds full), and sprinkle with a pinch of salt and pepper and top with grated cheese.
- Bake for 30 minutes in a 350 degree oven.
