Ingredients
- 1 pc egg
- 2 pcs egg whites
- 1 tbsp cheese Sharp Cheddar Shredded (Reduced Fat)
- 1/2 cup avocado chopped
- 1/2 tsp olive oil extra virgin
- 1/2 cup red bell pepper diced
- tsp salt to taste
- tsp chili powder
- black pepper to taste
Instructions
- In a small saute pan, over medium heat, add the peppers and cook (about 4-6 minutes).
- Whisk the egg and egg whites, salt, pepper, and chili powder together in a small bowl and pour the mixture over the peppers in the saute pan and stir.
- When almost firm, add the cheese and avocado and take off the heat and remove from the heat and cover.
- It will be about a minute or two for the heat in the pan to melt the cheese. Serve and enjoy!
