Ingredients
- 1 lb. cod fillet skin removed, cut in half
- 2 tbsp. olive oil
- 1/2 tsp salt
- 1/3 cup almond or nut flour rough ground
- 8 tbsp butter unsalted
- 1/4 cup Parmesan cheese grated
Instructions
- Preheat oven to 400 degrees F.
- Rub cod with oil and season with 1/2 tsp salt.
- Dip one side of fish only in flour and place on a parchment covered baking sheet. Do not dip the side that had the skin on it, that goes down on the cooking sheet.
- Bake fish until just cooked through, about 10 minutes Melt butter for dipping and stir in Parmesan and 1/2 tsp. salt. Enjoy!
