Ingredients
- 2 pounds Brussels sprouts , trimmed and halved
- 2 tablespoons coconut oil
- 1 ½ teaspoons curry powder
- ¾ teaspoon salt
- ½ cup coconut flakes unsweetened
Instructions
- Preheat the oven to 400?.
- In a large bowl, combine the Brussels sprouts with the coconut oil, curry powder, salt, and pepper.
- Spread the sprouts on a rimmed baking sheet, cut sides-down, and roast until they are browned and can easily be pierced with a fork, about 25 minutes.
- Remove the pan from the oven, add the coconut flakes, and toss.
- Return the pan to the oven and bake for 5 more minutes.
- Serve immediately.
