Ingredients
- 1 1/4 cups tea strong fruit (I like mango)
- 3 1/2 oz raisins
- 3 1/2 oz figs chopped dried
- 3 1/2 oz apricots chopped dried
- 2/3 cup almond flour
- 2/3 cup flour bread (I use organic)
- 1 tbsp plus 2 tsp truvia
- 1 tsp baking powder
- 1 tbsp almond milk
Instructions
- Mix the tea and dried fruits in a saute pan and bring to a boil.
- Reduce the heat and simmer for 30 minutes (watch it that the tea doesn't evaporate completely)
- Let the tea and fruit cool for about ten minutes
- Bring the oven to temperature at 350 F.
- Grease and flour a loaf pan
- Mix all ingredients in a bowl
- Pour in loaf pan
- Bake for about 1 hour or until a toothpick stuck in the middle comes out clean
- Cool on a wire rack
- Cut into slices and serve with a hot beverage like tea
