Ingredients
- 8 pcs eggs Large (or 1 1/4 cup egg whites)
- 2 cups vegetables (chopped) I like broccoli and spinach)
- 2 tbsp herbs fresh (I like thyme)
- pinch pepper and salt to taste
Instructions
- Preheat oven to 375 degrees F.
- Whisk eggs in bowl with salt and pepper until frothy.
- Add herbs and chopped vegetables
- Lightly grease a muffin tin (12 muffin cups).
- Pour the egg mix into each muffin cups.
- Bake for 10 minutes - they're done when browned and a toothpick inserted in the center of one comes out clean.
- Let cool and serve.
