Ingredients
For the Dressing:
- 1 cup berries fresh or frozen
- 1 tbsp orange juice (fresh squeezed)
- 1 tbsp grapeseed oil
- 1 tsp x Dijon mustard
- 1/4 tsp salt
- 1/4 cup water
For the Salad:
- 1 bunch kale (or spinach)
- 1 pc orange
- 1/3 cup almonds sliced
- pinch black pepper
Instructions
For the Dressing:
- Blend all the dressing ingredients together.
- Add more or less water to achieve the right consistency.
For the salad:
- Wash kale (or spinach) thoroughly.
- Chop kale (or spinach) into small bite-size pieces.
- Take rind off orange and slice into chunks.
To assemble salad:
- Place kale (or spinach) on a plate.
- Add the almonds, oranges slices, and a pinch of ground black pepper.
- Serve with the desired amount of dressing.
