Ingredients
Veggie Roll: (Plan a couple of pieces of each for each roll you make)
- bell pepper Sliced
- avocado Sliced
- carrots thinly sliced
- cucumbers Sliced
- Romain lettuce
- Rice paper wrap
Dipping Sauce:
- 1/2 cup mayonnaise (sugar free)
- 1/4 cup Parmesan cheese grated
- 2 tsps Dijon mustard Combine ingredients in a bowl and serve.
Instructions
- Prepare all veggies and set aside. Place rice wrapper in warm bowl of water to soften.
- As wrapper softens, lay on counter, fill with veggies and roll up like a burrito.
- Serve with dipping sauce on the side. Enjoy!
