Ingredients
- 6 cups zucchini shredded
- 3 tbsp olive oil (extra virgin)
- 3 tbsp lemon juice
- 1 pc lemon zested
- 1/2 tsp salt
- pepper to taste
- 1/4 cup parsley and basil fresh and chopped

Instructions
- Whisk together in a small bowl the lemon juice, oil, zest, pepper, and salt.
- Place the shredded zucchini in a large salad bowl and pour the liquid mixture over the zucchini.
- Add the fresh parsley and basil and toss.
- Top with the additional toppings or serve them on the side.
- Keep refrigerated.
