Ingredients
- 4 zucchini quartered lengthwise
- 1/2 teaspoon Thyme dried
- 1/2 teaspoon basil dried
- 1/2 cup Parmesan cheese grated
- 1/2 teaspoon Oregano dried
- 1/4 teaspoon garlic powder
- 2 tablespoons olive oil
- 2 tablespoons parsley leaves chopped (fresh)
- sea salt to taste
- ground pepper to taste
Instructions
- Preheat oven to 350 degrees F.
- Coat a cooling rack with nonstick spray and place on a baking sheet; set aside.
- In a small bowl, combine Parmesan, thyme, oregano, basil, garlic powder, salt and pepper to taste
- Put olive oil in pastic bag and put zucchini in bag with oil and roll around in hands until zucchini is coated in oil.
- Put Parmesan cheese on a flat plate and roll each zucchini stick in cheese to coat it.
- Place of prepared rack. Place in oven and bake until tender, about 15 minutes.
- Then broil for 2-3 minutes or until crisp and golden brown. Serve immediately garnished with parsley if desired.
