Ingredients
- 1/2 cup zucchini thickly sliced
- 1/2 cup red bell pepper sliced
- 1/2 cup yellow bell pepper sliced
- 1/2 cup yellow squash sliced
- 1/2 cup red onion sliced
- 16 pieces mushrooms large fresh button
- 16 pieces cherry tomatoes
- 1/2 cup olive oil
- 1/2 cup soy sauce
- 1/2 cup lemon juice
- 1/2 clove garlic crushed
Instructions
- Put the bell pepper, zucchini, squash, mushrooms, red onion and tomatoes in a large bowl.
- Mix (in a small bowl) olive oil, soy sauce, lemon juice, and garlic.
- Pour over the vegetables.
- Cover bowl, and place in the frig for 30 minutes.
- Preheat grill for medium heat.
- Lightly oil grate.
- Remove vegetables from the frig and put on preheated grill.
- Cook until tender - about 12 to 15 minutes. (Use grill basket or tin foil to grill on.)
